Building the MFWF Greenhouse by Joost

I heard about Joost several years ago and have been intrigued by the creativity behind the projects.  So I’m thrilled to find out that to celebrate the Melbourne Food & Wine Festival’s 20th year, Greenhouse by Joost will ‘pop up’ on the banks of the Yarra River from the 2nd to 20th of March.

Dutch-born Joost Bakker is a fifth-generation tulip farmer, artist, builder and environmentalist. Known for his various public works and vertical gardens; his work is created using “the stuff other people throw out”.

The Greenhouse restaurant is all about sustainability for the whole business – from design, to produce and everything in between.  This time, all visitor’s urine will be collected from purpose built lavatories to be used as soybean and canola crop fertiliser, which will then be used to power and build next years Greenhouse!

Who would have thought?

This is truly a meaningful project in more ways than one.  I’m going to be visiting many times over so hope to see you there.
